strawberry scones

1 cup of strawberries (or any fruit you like) cut into small pieces
3 tablespoons sugar
2 cups flour (all-purpose)
2 teaspoons baking powder
1/4 teaspoon salt
6 tablespoons butter, cut into cubes
2/3 cup cream
2 to 3 tablespoons vanilla sugar

Preheat your oven to 400* and lightly grease a baking sheet or use parchment paper.

Sprinkle about 1 teaspoon sugar on the prepared strawberries (fruit). Set aside.

In a bowl, combine sugar, flour, baking powder and salt. Cut in the butter sing a pastry cutter [I use my hands.] Make sure butter and flour are well mixed. Using a spatula, stir in the fruit, then add the cream all at one time and stir gently until dough holds together.

Turn onto a lightly floured surface and gently knead the dough, adding a little more flour if needed. Pat the dough into a disk about 3/4 inch thick. Cut disk into 8 wedges. Place the wedges on the baking sheet about 2 inches apart.

Bake scones for about 15 minutes. Sprinkle scones with vanilla sugar and bake for an additional 10 minutes, checking after 5 minutes so as not to over bake. You want the scones to be a light golden brown and the tops should give slightly when pressed.
