Cornmeal and Raisin Cookies
3/4 cup butter at room temperature
3/4 cup sugar
1 egg
1 1/2 cups all purpose flour
1/2 cup cornmeal
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking powder
1/2 cup raisins
Preheat
oven to 350. In the bowl of a mixer, cream the butter and sugar
together. Add the egg and beat well. Carefully mix in dry ingredients,
adding raisins last.
Using a small scoop, drop mounds of dough onto a lightly greased cookie
sheet. Bake for approximately 15 minutes,
until lightly browned. Makes about 24 cookies.
